Chicken Cacciatore
This is super easy for those cold nights. This recipe is Chicken Cacciatore Slow Cooker, so you can make it the night before if needed.
Prep time is about 25 minutes and it makes 6 servings.
3-3.5 lb. cut up chicken breast
1/3 C flour
2 Tbsp. vegetable oil
1 med. bell pepper
2 med. onions
2 C diced tomatoes (undrained)
1 C sliced mushrooms
1/2 tsp dried oregano leaves
1/4 tsp dried basil leaves
1/2 tsp salt
2 cloves garlic finely chopped
Grated parmesan cheese
Coat the chicken with flour and cook in a skillet for 15-20 minutes (until brown on all sides)
Cut the bell pepper and onions in quarters.
Layer the chicken, bell peppers and onions alternating with the tomatoes and seasoning in your slow cooker.
Slow cook for 4-6 hours on low. Add the cheese on before serving and pat yourself on the back. Enjoy.
